The Wisdom of the Dungheap with Hervé Jestin, Champagne Leclerc Briant

One chapter of Christian Göldenboog’s new book on biodynamic farming Die Weisheit des Misthaufens (The Wisdom of the Dungheap) deals with winemaking.

One of the co-stars of this chapter is Champagne Leclerc Briant’s chef de cave Hervé Jestin. In this video he talks about the assemblage for the wines of 2016.
