Benoît Gouez, Moët & Chandon's Chef de Cave, gives his Champagne Library Report 2018 on creating this year’s assemblage with the wines from the harvest 2017

Every six seconds in the world someone pops a bottle of Moët & Chandon and Benoît Gouez and his team are responsible for the quantitate of their wines but also for the quality.

In the last seven years for example Gouez ihrs lowered lowering the dosage of the Brut Impérial i gradually from thirteen grams per liter to nine grams. Consequently the wine feels lighter in the mouth while retaining the generous body which defines this cuvée too.

As the flagship of the house, the cuvée of the Brut Impérial  is made from over 200 crus.

This gives Benoît Gouez an intimate knowledge on the whole Champagne region and their viticulture.
