Champagne Tarlant Brut Millésimé 1989 + William Hunter = Oyez! Oyez! Oyez! Bottle Empty

The acidity is immense, reduced fruit, immense power on the palate and a special feeling of wellbeing in the stomach - this champagne effortlessly takes on a Chaource fermier. One should open this matured champagne definitely to a cheese. And yet thinking of the Scottish anatomist William Hunter and his idea of the stomach:

"Some physiologists, gentlemen, will have it that the stomach is a mill; others, that it is a fermenting vat; others again, that it is a stewpan: but in my view of the matter, it is neither a mill, a fermenting vat, nor a stew-an, but a stomach, gentlemen, a stomach. "
